20 years ago, just before I started my business, I went to see a health consultant. She stuck my feet in a bath and the ‘toxins’ came out. To this day, I still have no idea what this was.
Afterwards she gave me a consultation on how best to manage my energy through food.
Not only did I think it was a bit woo woo, I also took my energy for granted. I was 32, full of energy and with my foot on the gas 24/7, with a bit of sleep in between.
That was until I didn’t have any energy.
Bit by bit, there’s been lots of brilliant people that have helped me along the way and I did get there in the end.
Changing what I ate and reducing my stress triggers changed my life, for good, for the better. I crave veg. Anyone else? I still don’t crave fruit.
Anyway, it’s that time of year when I swap salads for soups.
Soups are so much easier. Over the Summer hols lunch has taken ages to prepare 🤣, especially as there were often 3 different requirements. I had words in the end. This is not a restaurant!!
In the olden days it was just me, a box of batch cooking & my dooogs for lunch. I love the company though 🥰.
Batch cooking saves me so much time and increases my chances of healthy eating, otherwise I grab what’s easiest.
As you know, I’m trying to educate myself further by using Zoe. Here’s another Zoe recipe: Cauliflower Soup. Even Mike liked it and he’s not a soup fan.

INGREDIENTS:
Cauliflower
Onion
Lemon juice
Olive oil
Vegetable stock

STEP 1:
Roast your cauliflower for 35 minutes at 220°C. You can see mine is pretty burnt. Although it added more flavour. I like to think it was caramelised 🤣.

STEP 2:
Brown your onion. Add garlic followed by the roasted cauliflower and stock.

STEP 3:
Blend. Add salt, pepper and lemon juice to taste.
